My first attempt at deviled eggs... not a particularly difficult endeavor, but it was a great use of our dyed Easter eggs! The recipe can be found here.

Oriental Chicken Salad

·        1/3 Cup Rice Vinegar
·        ¼ Cup Sugar
·        2 ½ Tablespoons  Sesame Oil
·        2 Tablespoons Honey
·        2 Tablespoons Soy Sauce
·        ¼ Cup Chopped/Slivered Almonds (toasted)
·        2 Packages Oriental Ramen Noodles
·        ¼ - ½ Cup Craisins
·        5 Cups Chopped Green Cabbage
·        3 Cups Chopped Lettuce
·        1 (4-6 oz) Can Mandarin Oranges (cut in half)
·        2 Cups Cooked Cubed Chicken

1.      Combine first 5 ingredients in a small saucepan.  Bring to a boil and cook for 1 minute, stirring constantly.  Chill.
2.     Crumble ramen noodles.  Spread crumbled ramen noodles and almonds on a cookie sheet.  Broil until lightly toasted, tossing occasionally.
3.     Mix in a large bowl cabbage, lettuce, craisins, mandarins, and chicken.  Pour chilled dressing over mixture.  Serve into dishes and sprinkle almond/noodle mixture over-top.  Also sprinkle sesame seeds on top of dish.

Strawberry Clafouti

Fun to say and even more fun to make, this dish is as easy as 1-2-3. It not only looks pretty, but tastes delicious too. This dish would be ideal for a brunch or impromptu party and is an ideal way to utilize all the fresh berries at your disposal this Summer.

Spicy Honey-Brushed Chicken


I made these as chicken breasts by browning the chicken in a cast-iron skillet, then transferring to a 450 degree oven for 15 minutes.  Then, I brushed the honey glaze on for an extra 2 minutes.  Your version of Spicy Honey-Brushed Chicken will be extra spicy (because I ran out of some spices) and yours will have even more honey goodness, as the pan had a lot of glaze left over that I didn't see until I got home.
